OF DUST AND LARD


One of the most traditional customs of Spanish Christmas festivities, which don’t forget go on through the New Year to Epiphany (or Twelfth Night or Three Kings Day) on January 6th, is the inclusion at almost every get-together of sweet dishes such as those pictured above and most, if not all, come down to us from the Arabs.

1 cup of sugar
1 tsp salt
1 cup of brown sugar

CHRISTMAS CAKE

Did you know that what we know as traditional English Christmas cake started out as porridge? Over time it ingrained the finest of ingredients and what was a luxury became the bane of Christmas celebrations!!

It is true. A couple of centuries ago Christmas Cake was a sort of boiled porridge (only big houses had ovens) which was supposed to be eaten after the day of fasting on Christmas Eve. During the 16th century the oatmeal of the porridge was replaced by wheat flour and butter and eggs were added. The spices and dried fruits of the season which were also added were supposed to represent the gifts of the kings from the East and so Christmas Cake was eaten, not at Christmas, but on the Twelfth Night (5th January).

My father loves it and as my parents usually spend Christmas here I am once again thinking about the annual chore of making cake. I always like to use the following simple recipe, so I thought I would share it! Last year I couldn’t find it and had to use another recipe, but the cake was not nearly so good.

LIMES, LIMES EVERYWHERE!

Our regular reader and commentator, Capricious, has sent us the following:

v-limes.jpgLimes are in season at the moment and, as I have a lime tree outside my kitchen door, I am forever trying to find new things to make with them. I have always liked Indian style lime pickle, but never eat it in public as it is so hot and I usually end up having a coughing fit!!
