HOW THE CORK GOT IN YOUR BOTTLE – 1
Until Prospero first came to Jimena over thirty years ago, it had never occurred to him to wonder how that cork ever came to be there. In this illustrated series, we will try to offer a step-by-step look at the process. The reason, of course, is that Jimena is at the doorstep of one of the best cork oak forests in the world and this year’s harvest is just about starting now. Because of the blog format, however, you will be fed the series little by little in reverse order. It will be fairly long but fascinating, we hope. Watch this space…EROTIC DISH
Needed: 2 fresh figs per person, two thin slices (lonchas) of good jamón serrano, extra virgin olive oil, lime juice, some lightly toasted pine nuts (they never mentioned a partner…). Wrap the ham around the figs, heat briefly without cooking the ham. Once on the plate sprinkle on the olive oil, the lime juice and the pine nuts.
